Essential Waitrose Apple & Blackberry Pie

I created this beautiful pie using #EssentialWaitrose ingredients, making it very affordable!

Ingredients

Pastry

250g Waitrose Essential Plain Flour
1 cup/125g Icing Sugar
Pinch of Salt
Pinch of Ground Cinnamon
1 cup/125g Vegan Margarine
2 tbs Ice Cold Water

Filling

4 Waitrose Essential Braeborn Apples, peeled & cubed
2 Bramley Apples, peeled & cubed
Zest & Juice of 1 Waitrose Essential Orange
Pinch Ground Nutmeg
Pinch Ground Cinnamon
1 Punnet Waitrose Essential Blackberries
100g Golden Caster Sugar

Method

Sieve the flour, icing sugar, salt, cinnamon together into a large mixing bowl.

Rub the margarine into the flour mix with your hands until the mix resembles a bread crumb like consistency.

Pour in enough water to bring the dough together into a ball and pick up all the bits from the bowl.

Give it a slight knead for 2 minutes and that’s it.

Place the pastry in the fridge to chill for at least an hour.

Whilst the pastry is chilling, in a large saucepan add the caster sugar & heat over a medium heat until it starts to melt.

Add the apples followed by the rest of the ingredients except for the blackberries. Allow the apple mixture to cook for 4-5 minutes.

Remove the apples from the heat and set aside.

Split the pastry into two, then roll one half into a large square around 3mm thick. Place the pastry into your pie dish & trim around the edge.

Add the apple mix to the dish & top with the blackberries.

Roll out the 2nd half of the pastry again to 3mm thick then cut into strips. You can get creative and plait a few of the strips.

Lay the pastry strips over the pie so that they interlink to form a lattice effect.

Sprinkle over additional sugar then back in a pre heated oven set at 180 degrees C for 25 minutes.

Allow to cool slightly before serving.
