Burger Recipe

1 tin/240g Chickpeas (drained)
1 tin/240g Mixed Pulses (drained)
Handful of Chopped Fresh Coriander
1 tbs of Smoked Chipotle Paste
2 tsp of Jerk Seasoning
1 tsp of fresh red chilli or dried chilli flakes
Zest & Juice of Half a Lemon
3 Tbs of Gluten Free Flour
Salt & Pepper

Method

Combine all the above ingredients in a food processor until the mixed starts to combine, Lightly flour your hands & form the mixture into your desired burger shapes, I made 4 extra big burgers from this mixture! Simple fry in Coconut Oil until Golden on each side, then place onto a baking tray and place in a pre heated over set at 180 degrees for 10 minutes.

I served the burger in a grilled bun, with avocado, caramelised plantain & mango salsa.

To make the Mango Salsa, simply combine cubes of fresh mango, chopped red onion, coriander, red chilli.

With the plantain all I did was lightly fry it in coconut oil until caramelised on each side.

Serve it all inside a Bun of your choice with Vegan Mayo & ketchup.
