Peri Peri Skewers with Steam Roasted New Potatoes

“These skewers are a perfect summer time treat which can be cooked on a bbq, in a pan or in a wood fired oven like I did in the video below! Feel free to get adventurous with what you put on your skewers”
Ingredients
Peri Peri Sauce
3 Red Peppers
5 Red Finger Chilli’s (this is mild/hot)
1 Red Onion
3 Cloves of Garlic
1 tsp Dried Sage
1 tsp Paprika
1 tsp Oregano
1 tsp Cracked Black Pepper
Pinch Sea Salt
Zest of 1 Lemon
Juice of 2 Lemons
1/4 cup/120ml White Wine Vinegar
1/2 cup Grape Seed Oil
Skewers
1 Block Extra Firm Tofu, cubed
1 Yellow Pepper, cubed
1 Courgette, cut into discs
2 cups/100g Button Mushrooms
1 Red Onion, cubed
Pembrokeshire New Potatoes
2 Large Handfuls Blas y Tir New Potatoes
1/2 cup/120ml Vegan Friendly White Wine
Pinch Sea Salt & Pepper
2 Sprigs Fresh Thyme
2 Sprigs Fresh Rosemary
