Mushroom & Ale Pot Pies

Rich filling & crunchy topping..the perfect quick simple pots pies. Feel free to add lentils or even my seitan steak chopped into cubes in the filling to make it even more hearty.

2-3 tbs Olive Oil
4 cups/300g of Chopped Mixed Mushrooms
12 Small Pearl Shallots, Pealed
2 Cloves Garlic, minced
2 Sticks Celery
2 Large Carrots
1 Small Bottle Ale
1 cup/240ml Vegetable Stock
1 tbs Marmite
2 Sprigs of Thyme
1 Bay Leaf
2 tbs Tomato Puree
2 tbs Balsamic Vinegar
1 tbs Soy Sauce
Pinch Salt & Pepper
2-3 tbs Plain Flour, to thicken (if needed)

1 Pack Filo Pastry

Glaze

1/4 cup/60ml Milk
2 tbs Maple
4 tbs Oil
