Key Lime Pie

Requested so many times by my amazing youtube subscribers, I had to make it. I never ate key lime pie prior to going vegan so I had to use my imagination when coming up with my recipe. This recipe works so well & the end result is beautiful. Feel free to choose a different biscuit for the base.

Ingredients

Base

1 & 1/2 Packs Lotus Biscoff Biscuits
2/3 cup/160g Vegan Butter, melted
3 tbs Coconut Oil, metled

Filling

1 tin of Coconut Milk
2 tbs Fresh Lime Zest
Juice of 2 Limes
1/2 tsp Matcha
1 & 1/4 cups/280ml Almond Milk
5 heaped tbs Corn Starch
5 tbs Icing Sugar

Meringue

1 cup/235ml Chickpea Water
1/2 cup/60g Icing Sugar
1 tsp Vanilla Essence
1/4 tsp Xanthan Gum
