Grilled Corn on the Cob

Perfect side which can be grilled on the bbq or if the weather is bad you can achieve the same flavour using a griddle pan in your kitchen.

Ingredients

5 sweetcorn cobs, with husks
4 tbs Vegan Butter/Margarine
1 tbs Chipotle Paste
Pinch Sea Salt
1 tbs Chopped Thyme

Method

Carefully peel back the husks from the cobs and remove the fibres underneath. Plat or Tie the husks.

Bring a large saucepan of water to a boil, then place a couple corns into the water leaving the husk sticking out. Cover over the saucepan with clingfilm & allow the cobs to steam/boil for 3 minutes. Remove the cobs from the water & steam/boil the rest of the cobs.

Mix together the Chipotle butter ingredients in a small ball then place in the fridge.

Before serving heat your bbq or griddle pan, carefully place the cobs onto the grill/griddle pan an allow to char.

Once charred serve with chipotle butter brushed over.
