3 tbs Olive Oil
2 Large packs Mixed Mushrooms
1 tsp Ground Cumin
1 tsp Ground Ginger
1 tsp Smoked Paprika
1/2 tsp Cayenne Pepper
1 tsp Dried Oregano
Pinch Chill Flakes

Smokey Black Beans 

1/2 tbs Vita Coco Coconut Oil
1 tin/400g Black Beans, drained & rinsed.
1/4 tsp Cayenne Pepper
1/4 tsp Ground Cumin
1 clove Garlic, minced
1/4 tsp Oregano
1 tsp Tabasco Sauce
1/4 tsp Chilli Flakes
Juice of Half a Lime

Tomato Rice

1 & 1/2 cups/300g Long Grain Rice
1 tin Chopped Tomatoes
1 tsp Paprika
1 tsp Cayenne Pepper
1 tbs Oregano
1 bay leaf

Guacamole

2 Very Ripe Avocados, Peeled & De-stoned.
Juice of Half a Lime
Pinch of Sea Salt & Cracked Black Pepper
Handful Chopped Coriander
6 Cherry Tomatos
1 Clove Garlic, Minced
1/4 tsp Dried Chilli Flakes (optional)

Peppers

1 Red Pepper, sliced fine
1 Yellow Pepper, sliced fine
1 Red Onion, sliced fine
